Meatless in the the Mile-High City

Colorado may be known as cattle country, but WaterCourse Foods is a restaurant that has strayed away from the herd to serve up a mouth-watering meatless menu right in the heart of Denver. “Eat the path of least resistance” is the restaurant’s slogan, and it lives up to that daily by offering fresh vegetarian fare infused with local, organic, and whole foods. Opened seven years ago by Daniel Landes, a graduate of the Natural Gourmet Cookery School in New York City, WaterCourse has become one of Denver’s most successful restaurants.

If you find yourself milling around the mile-high city and get a craving for comfort food that is both healthful and vegan, this casual little restaurant, just a stone’s throw from the state capitol and other city landmarks, is a paradise for the vegan palate. Modestly priced and with a variety of inventive and satisfying menu options that can be prepared vegan on demand, WaterCourse is the perfect place for breakfast, lunch, and dinner!

Start your day off right with the Amazing Banana Bread French Toast, which is baked fresh, grilled, and then topped with maple-roasted walnuts, or try one of the numerous tofu scrambles that made the place famous. After checking out the bounty of funky boutiques, bookstores, and record shops that surround the restaurant, stop in for lunch and fill up on their hearty, healthier version of a philly—made with grilled seitan, mushrooms, peppers, and onions on a fresh baguette. Or get tempted with tempeh! Tempeh chorizo tacos and the best tempeh burger to ever grace a bun can also be found on the lunch menu.

If you are looking to do dinner in Denver, WaterCourse’s delicious stirfries, pastas, and barbecue dishes are unsurpassed. Check out the local artwork that adorns the walls while you try to decide between the marinated tempeh steaks, dredged and fried to perfection for a Tempeh Scaloppini or the flavor fiesta of the Caribbean Jerk Tofu. And for all of you who salivate at the mere mention of the word “barbecue,” WaterCourse offers a stick-to-your-ribs-may-I-please-have-more-napkins kind of down-home barbecue-baked tofu with steamed greens and mashed potatoes.

Oh, and did we mention that it has vegan gravy and the best vegan chocolate cake? Both are yummy—but probably best served separately!
