PETA pal and vegan Russell Simmons, cofounder of Def Jam Records, first turned us on to New York's Vegetarian's Paradise 2, which offers an amazing array of mock meat dishes like Ginger Scallion "Chicken," Sesame Soy "Chicken" With Broccoli, Peking "Spare Ribs," Orange Tangerine "Beef," "Shrimp" With "Lobster" Sauce, and much more.

These vegetarian delights can be traced back thousands of years, to China's early imperial dynasties. Before the emperor made his annual prayer for the kingdom's prosperity, he was required to practice strict vegetarianism for seven weeks. The royal court's skilled chef created extraordinary vegetarian recipes with the appearance, texture, and taste of the emperor's favorite meat and seafood dishes.

Even if you can't get to New York, you can still eat like a king. Vegetarian's Paradise 2 has shared some of its best recipes with us, so you can cook them up in your own kitchen tonight.
