Keeba's Keeps 'Em Coming Back for More

Keeba’s, the brainchild of Dave Swartz, Trish Eddy, and friends, is tantalizing taste buds in the Salt Lake City area with healthy veggie cuisine in a fast-food-style restaurant.

Stroll by Keeba’s at the Old Mill Village Plaza and you might think it’s a typical burger joint. But take a closer look at Keeba’s menu and you’ll quickly realize that it offers a healthier, more humane spin on burgers, potatoes, and even breakfast (scrambled tofu!), with organic, vegetarian—mostly vegan—ingredients. You’ll have a hard time deciding between the mushroom burger, with its savory mushrooms, bell peppers, onions, fresh herbs, and grains (see recipe below)—or the Thai wrap, with curried tofu, bean sprouts, and grilled mushrooms smothered in a peanut dressing, all rolled up in a red-pepper wrap. Or try a sloppy side of veggie chili with Keeba’s baked French fries. And we dare you to resist a Gone Bananas smoothie, with banana, unfiltered apple juice, almond butter, and soy protein. Inside Keeba’s, the ambience is bright and cheery, with large murals on the walls, and outside tables are available to enjoy the fresh mountain air during the summer months.
