Claire’s Corner Copia was born out of the desire to share nutritious, delectable vegetarian foods with people, and since 1975, owner and Chef Claire Criscuolo, a registered nurse, has enticed locals, students, and tourists with her mostly vegan, always-scrumptious menu. “Eating well is the best prevention, hence my love for cooking and feeding people,” Claire explains. “Owning Claire’s Corner Copia has given me the opportunity to introduce people to the benefits of eating delicious foods that are also healthful.”

One popular dish is the Soy Chicken Provençal, which is GMO-free faux-chicken with a colorful medley of sweet grape tomatoes, diced zucchini, white wine, and herbs. The Yellow Curried Organic Tofu With Mixed Vegetables is prepared using locally grown ingredients, cubes of roasted organic tofu, and Claire’s homemade coconut milk and curry spices. The vegetables are selected and prepared fresh each day and served over organic brown rice.

Claire’s Corner Copia offers diners a panoramic view of the historic New Haven Green and Yale University’s campus, and visitors can dine in the airy outdoor café during the warmer months. The building features hand-painted, Tuscan-inspired wall art, original brick masonry from the early 1900s, and 30-year-old wainscoting. Claire says, “Our customers can really ‘feel’ the love and care that goes into each and every thing at our beloved little place... We genuinely care about our environment and all living things.” The restaurant’s community-minded efforts include fundraisers for local and national charities and monthly art exhibits.

Claire serves a wide variety of customers and appreciates the chance to introduce people to vegan cuisine. “We are doing our best to educate our customers about the meaning of vegan and the benefits,” she explains. “Once they learn what vegan means, they are invariably more open to the opportunities.”
