Vegan Dishes Are Finer at the Chicago Diner

Say good-bye to boring bland fries and toast—vegetarianism is colorful, creative, and happening! One step into this deco diner and you’ll want to come back for more—even for late-night cravings.

Chicago Diner’s Scrambled Tofu Deluxe, which Chef Jo A. Kaucher describes as “so yum, versatile, and easy to make,” has worldwide flair. With simple tofu, tamari, tahini, sunflower seeds, and sesame seeds as the main ingredients, this scrambled egg-free dish takes on Asian appeal by incorporating bok choy, pea pods, and bean sprouts. For Mexican flavor, the dish is spiced up with peppers, onions, and salsa. For an Italian taste, fresh basil, oregano, and sautéed garlic are combined. As Chef Jo says, “[I]t’s not just for breakfast anymore.”

This April, the diner celebrates 21 years of meat-free dining. Loyal fans return for other famous favorites like the No Meata Fajita and Radical Reuben. During the warmer months, diners sip famous Strawberry Blonde Smoothies in the patio garden. This is diner dining at its best. No wonder it was named the “Vegetarian Restaurant of the Year 2003” by VegDining.com.

Most of the items on the menu are vegan and go through “seasonal revisions” according to coowner Mickey Hornick. Local organic produce and natural ingredients accent appetizers like Veggie Skewers—pesto-grilled veggies layered with tofu and a special sweet red pepper sauce—and main dishes like homemade Seitan Stroganoff simmering in a rich white wine sauce. Raved one customer, “It may be called seitan, but it sure tastes heavenly!” Not to be missed are sinful sweets like German Chocolate Cake and Jo’s Rumballs.

Chef Jo brings more than 25 years’ experience to her kitchen and has been acknowledged as one of the finest vegetarian chefs in the nation by Vegetarian Times. She began baking bread at Chicago’s original natural food restaurant, The Bread Shop, in the early ’70s, and today her baked goods are on the shelves of Whole Foods and Wild Oats natural groceries. Chef Jo and her team cater events and even offer vegan wedding cakes!

Chef Jo has graciously shared some of her favorite recipes with us so that you can enjoy the flavor of Chicago Diner in your own home.
