Vegan Delights Are Always in Bloom at the Blossoming Lotus

Kauai, Hawaii's Blossoming Lotus restaurant dishes up exciting vegan fare as exotic as its tropical island locale. The restaurant specializes in "vegan world fusion cuisine," and the chefs take their inspiration from sources as close as the beautiful islands that surround them and as far away as Krishna Loka, India.

One of the most popular dishes, Govinda's Curry, features coconut-curried mixed vegetables with tofu or ulu (breadfruit) served over a bed of brown rice. The Tropical Paradise Salad is an island-style purple-potato salad made with coconut milk and served over mixed organic greens and garden-fresh veggies. Kala Lu's Green Papaya Salad, which combines locally grown papayas with garden vegetables and ginger, is just one of the many "live food" specialties served at the Blossoming Lotus. The live food offerings, all bursting with fresh flavor, also include soups, pts, nut and seed cheeses, nori rolls, and fruit pies, as well as other delights whipped up by the chefs especially for the restaurant's Live Fridays.

For heartier fare, try Da Kine Surfer's Special-gourmet beans and rice served with mushroom gravy-the Tempeh Reuben, or the daily pizza. If you can't decide, build your own "sampler plate" from a selection of more than a dozen dishes, including Tuna-Free Tempeh Salad, Grilled Tofu, Corn Bread, Herb-Roasted Potatoes, and Mung Dahl.

Be sure to save room for dessert, as Blossoming Lotus offers everything from Big Mamma Freedom's Chocolate Cake to The Bliss of Krishna, a blissfully good tropical rice pudding made with coconut milk, toasted macadamia nuts, basmati rice, and traditional Indian spices. They taste sinful, but like everything else on the menu, the desserts are 100 percent animal-free.

This vibrant restaurant, decorated with colorful artwork from local Kauai artists and awash in the sounds of upbeat world music, continues to win new converts-and is converting more than a few carnivores in the process. Chef Mark Reinfeld explains, "Quite a few who have dined at the Blossoming Lotus have actually switched to a vegan diet after experiencing the vast and tasty possibilities that can be created with plant-based foods!"
