Black Bean and Corn Salad

Make this colorful salad a day in advance so the flavors will develop, then add the tomatoes right before serving.

    2 cups black beans, drained
    2 cups corn, drained
    6 Tbsp. fresh lime juice (or juice of 1 lime)
    5 Tbsp. olive oil
    1/4 cup red onion, minced
    1/4 cup scallions, minced
    1/8 cup cilantro, minced
    1 1/2 tsp. cumin
    1/2 cup chopped tomatoes
    Salt and pepper, to taste

• Mix all ingredients, except the tomatoes, together.
• Add salt and pepper. Cover and chill.
• Shortly before serving, toss in the tomatoes.

Makes 4 servings
