Gravy
Although this is an excellent topping for any bean or vegetable dish, for a full American experience, try pouring it over American biscuits with a side serving of potatoes.
1 medium onion, diced 2 Tbsp. unbleached all-purpose flour 1 tsp. garlic salt 2 Tbsp. cornstarch 1 1/2 cups water or vegetable broth (p. 14) 1 tsp. yeast extract (see glossary of ingredients) 1-2 Tbsp. soy sauce or tamari 1-3 tsp. black pepper, to taste
• Heat the oil over medium heat sauté the onion for a few minutes. Add the flour and garlic salt and sauté for another 8 to 9 minutes. |
