Hummus
This versatile dip is great-tasting and easy to make. It can be served with pita bread as an appetizer or used as a spread for sandwiches. Use any herb of your choice—dill, mint, etc.
1 15-oz. can chickpeas, rinsed and drained
3 garlic cloves, minced
1/3 cup tahini
1/4 cup fresh lemon juice
1/4 cup water
3/4 tsp. salt
• Process the chickpeas in a food processor until smooth, stopping to scrape down the sides. Add the garlic and remaining ingredients. Pulse until blended.
Makes approximately 4 cups
