Chocolate Tofu Pudding
Do you have last-minute dinner guests? Spoon this easy pudding into martini glasses, and let it chill. Then, top it with fresh fruit right before serving.
1 lb. silken tofu
2 Tbsp. cocoa
1/4 tsp. salt
1/3 to 1/2 cup maple syrup (use larger amount if using firm tofu)
1 tsp. vanilla extract
• Place all the ingredients into a blender and process until completely smooth.
• Spoon into small bowls and chill before serving.
