Green Bean Casserole

This classic Thanksgiving Day side dish is creamy with a crisp onion topping.

    1/4 cup (1/2 stick) margarine
    1/4 cup flour
    1 1/2 cups faux chicken broth, warmed (try Osem or Telma brands, available in the kosher section of supermarkets)
    1 Tbsp. soy sauce
    1/2 tsp. garlic powder
    2 Tbsp. vegetable oil
    1/4 cup nutritional yeast (available at health food stores)
    2 14.5-oz. cans French-style green beans, drained
    1 2.8-oz. can French-fried onions

• Preheat the oven to 350°F.
• In a medium saucepan, melt the margarine over low heat. Add the flour and whisk it continuously until it forms a roux. Add the faux chicken broth, soy sauce, and garlic powder, whisking continuously for 1 to 2 minutes until the sauce is thick and bubbly. Add the vegetable oil and nutritional yeast. Whip again until smooth.
• Pour the sauce into a small casserole dish, add the green beans, and stir to coat. Bake for 10 minutes, then top with the French fried onions and bake for 10 more minutes, until browned and bubbly.

Makes 4 servings
