Great Gazpacho
Can't stand the heat? No need to get out of the kitchen when you prepare this easy, no-cook summertime soup.
3 cups vegetable or tomato juice
1 medium onion, minced
2 medium tomatoes, diced
1 green bell pepper, minced
1 clove garlic, crushed
1 medium cucumber, diced
2 Tbsp. lemon juice
2 Tbsp. red wine vinegar
1 tsp. dried tarragon
1 tsp. minced fresh basil
Pinch of ground cumin
Dash of hot sauce
2 Tbsp. olive oil
Salt and pepper to taste
• Combine all the ingredients and chill for 2 hours.
Makes 6 servings
