Triple Chocolate Pudding

Here’s a childhood favorite that’s always tops on my list of desserts. It takes only minutes to make and is perfect when you’re craving something rich and chocolaty. Yum!

    3/4 cup sugar
    1/3 cup unsweetened cocoa powder
    1/4 cup plus 2 Tbsp. cornstarch
    Pinch of salt
    3 cups chocolate soy milk or other nondairy chocolate milk
    1/4 cup semisweet chocolate chips
    1 tsp. pure vanilla extract

• In a large pot, whisk together the sugar, cocoa, cornstarch, and salt. Add the soy milk, whisking until smooth.
• Bring to a boil over medium heat, whisking continually. Lower the heat and simmer gently, whisking continually, for 5 to 10 minutes, or until thick.
• Remove from the heat and stir in the chocolate chips and vanilla.
• Serve warm.

Note: To serve chilled, scoop into a bowl—placing a piece of plastic wrap on the surface of the pudding in order to prevent a skin from forming—and refrigerate until ready to serve.

Makes 3 1/2 cups
