Sweet Potato Biscuits
Not sure what to do with your leftover sweet potatoes? Make these tasty rolls, and serve them with cinnamon-spiced margarine or apple butter.
1 cup cooked sweet potatoes
1 cup flour
1 Tbsp. baking powder
1/4 tsp. baking soda
1 tsp. salt
4 Tbsp. vegetable oil
1/4 cup toasted sunflower seeds
• Mash the sweet potatoes well in a large bowl. Add the dry ingredients and the oil. Mix well. Add the seeds.
• Using your hands, form into 6 biscuits. Bake for 15 to 25 minutes at 375°F.
