Japanese Radish Salad

This is an unusual salad, but once you try it, you will fall in love with it. Make your own garlic oil by frying 1 Tbsp. of garlic in 2 Tbsp. of oil for a couple of minutes, until the garlic is light brown. Remove the garlic from the oil before using it.

    For the Dressing:
    3 Tbsp. soy sauce
    2 Tbsp. rice vinegar
    1 Tbsp. mirin (sweet Japanese wine; you can also mix Saki, Japanese wine, and sugar to use instead)

    • Place all the ingredients in a bottle and shake vigorously to mix.

For the Salad:
1 medium white radish, peeled and sliced into 1-inch long strips
2 cups chopped cilantro
1 Tbsp. garlic oil
1 Tbsp. fried onions
1 Tbsp. fried garlic
Dressing (see recipe)

• In a small bowl, combine the radish and cilantro. Set aside.
• In a small pan over medium-high heat, cook the garlic oil until smoke rises. Pour over the radish and cilantro mixture.
• Garnished with the onions, garlic, and dressing.

Makes 4 servings
