Shoofly Pie

This pie got its name from being so sweet that you had to “shoo” the flies away from it.

    1 cup water
    1/2 Tbsp. cornstarch
    1/2 cup light molasses
    1/2 cup dark corn syrup
    1 tsp. baking soda
    1 unbaked, 9-inch pie crust

    For the Topping:
    1/2 cup sugar (try Florida Crystals brand)
    1 Tbsp. light molasses
    1 tsp. cinnamon
    1/2 tsp. nutmeg
    1/3 cup margarine, softened

• Preheat the oven to 325°F.
• In a small saucepan, bring the water to a rolling boil. Whisk in the cornstarch. Mix in the molasses, corn syrup, and baking soda. Stir constantly until thickened.
• Spoon into the unbaked pie crust.
• For the topping, combine the sugar and light molasses. Mix in the remaining ingredients until crumbly. Spoon the topping over the pie.
• Place the pie on a baking sheet covered in aluminum foil and bake for about 40 minutes or until the pie is medium set and dark brown.

Makes 8 servings
