Johnny Cakes

Serve these delicious cakes for breakfast, lunch, or dinner.

    1 Tbsp. sugar (try Florida Crystals brand)
    1/2 tsp. sea salt
    1 cup corn meal
    1 cup boiling water
    3 to 4 Tbsp. plain soy milk
    Vegetable oil, for frying
    Margarine (try Earth Balance brand)

• In a large bowl, combine the sugar, salt, and the corn meal. Add the boiling water and stir well. Thin immediately with the soy milk to a mixture that will drop easily from a spoon. (Additional soy milk may be necessary: The mixture should be the consistency of thin mashed potatoes.)
• Heat the vegetable oil in the griddle. Drop the batter by the spoonful and cook for 5 to 6 minutes on each side until a brown, crunchy crust is formed and the inside is soft.
• Serve hot with margarine.

Makes 4 to 6 servings
