Vegan Banana Bread French Toast
1 loaf of banana bread (the drier, the better, for tasty results)
1/2 cup soft tofu
1 cup vanilla soy milk
2 Tbsp. turbinado sugar
1 Tbsp. canola oil
2 tsp. arrowroot powder
1 tsp. vanilla extract
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
Slice the loaf of bread into 1-inch-thick slices. Blend the remaining ingredients well. Dredge the banana bread in the dip and fry on a skillet with a little vegan margarine. Serve with fresh fruit and real maple syrup.
