Lemon Pie
3 cups unsweetened pineapple juice
1/2 cup orange juice concentrate
1/2 cup evaporated cane juice
6 Tbsp. cornstarch
1/2 tsp. pure lemon extract
2 Tbsp. oil
1/2 tsp. salt
1 Tbsp. freshly grated lemon rind
6 Tbsp. fresh lemon juice
Whisk all ingredients in a saucepan until smooth. Place saucepan on medium-high
heat and stir constantly until the filling is thick and clear yellow. Pour
into a baked pie shell and chill until firm. Top with chilled nondairy whipped
cream and serve. It can also be layered in clear glasses with nondairy whipped
cream for a lemon parfait. (Nondairy whipped cream recipes of several varieties

Light Oat Waffles
2 Tbsp. sesame seeds
2 cups water
2 cups rolled oats
2 Tbsp. whole wheat or buckwheat flour
1 Tbsp. lecithin, liquid or granules
1/2 tsp. salt
2 tsp. vanilla
1-2 Tbsp. maple syrup or Sucanat
Grind the sesame seeds in the blender. Add the remaining ingredients. Blend
well and pour into a bowl. The batter will thicken as it sits and you will
need to add a little water to make it the same consistency as when you first
poured it out of the blender. Bake for 8 to 10 minutes on a preheated waffle
iron. The waffles may be frozen for future use after they cool or serve
them immediately with fruit.
