Q. Can you recommend a good brand of ice cream maker for making soy ice cream?

A. Any ice cream maker that makes good dairy ice cream can be used to make good soy ice cream. For recipe ideas, I recommend the book Vice Cream, by Jeff Rogers.

Q. Is there any way to make a vegan s’more?

A. Definitely! All you need to make vegan s’mores is to start with vegan versions of the three main ingredients. Many brands of graham crackers are vegan, and you can find vegan chocolate bars at your local health food store. Vegan marshmallows are available from Pangea. Need I say “s’more”?

Q. Are there any legitimate Web sites that sell vegan chocolate bars? What are some brands that I might find in mainstream grocery stores?

A. Here are the Web sites of some of my favorite vegan chocolate bars: ChocolateBar.com, TropicalSourceCandy.com, DagobaChocolate.com, and ChocolateDecadence.com. Look for vegan chocolate bars in natural food stores—I’ve yet to see them in a mainstream grocery store, but you never know.

Q. My boyfriend and I have been trying to eliminate eggs from our diet. I’m wondering if there is a product that we can use to replace eggs in omelets. I know of Ener-G egg replacer for baking, but I’m not sure about replacing whole eggs—maybe scrambled tofu is the only substitute? Oh, and is there any vegan candy corn?

A. Yes, tofu is your best bet—be sure to season it with salt and pepper and a dash of turmeric for color, and use extremely well-drained regular firm tofu (don’t use silken tofu for this). To make it more like an omelet, add some shredded soy cheese to help hold everything together. You can also add sautéed peppers or mushrooms or top it with salsa.

I don’t know of a source for vegan candy corn, but Pangea sells a variety of vegan sweets, from decadent chocolate truffles and fudge to fluffy marshmallows.
